Spinach Dip -From Scratch- no mix

I used to love the packaged mix to make spinach dip. . . until I became more aware of ingredients.  There are a lot of weird ingredients: maltodextrin, disodium guanylate, disodium inosinate, natural flavors (whatever those are) and of course MSG. So I had to make my own version from scratch. 

This dip can be made with almost any type of greens that you have.  I used a combination of kale and Swiss chard, because that is what we have in our garden.  DH loved it so much that I thought it would be gone in one sitting.

Spinach Dip From Scratch Recipe (No Purchased Mix)

Ingredients:
8 oz total of spinach, kale, chard, or other greens
1/2 c bell pepper, finely chopped
1/2 c green onion, sliced
1/4 c red onion, finely chopped
*water chestnuts would probably be really good, but we didn't have any
1 garlic clove, minced
2 oz. herbed cheese (I used herbed goat cheese)
1/2 c mayonnaise
1/2 c sour cream
1/4 t lemon juice
1/2 t salt
3/4 t cumin
1/4 t cayenne
1/8 t dill weed, dried

Directions: 
1. Cook greens either by sauteing in a pan or steaming them.  Once cool squeeze out excess water by wringing in a towel.

2. Mix all ingredients together.

3. Serve with sourdough bread cubes, crackers, or cut up veggies.
